Peachy banana breakfast oats


  • 2 medium bananas
  • 2 cups of porridge oats
  • 2 cups of milk (I use almond milk)
  • 2 eggs
  • 1/2 tablespoon maple syrup
  • Teaspoon ground cinnamon
  • 2 donut peaches (or substitute for your favourite soft fruit or berries)


  1. Grease a baking dish with spray oil/coconut oil/butter
  2. Slice the bananas and lay them out in the base of the dish, then cover with the porridge oats
  3. Whisk together the milk, eggs, maple syrup and cinnamon, then pour over the oats in the dish
  4. Scatter the peaches over the top then put the dish into a preheated oven at 180c for 25 minutes, until the oats have absorbed the milk
  5. Spoon into bowls and get stuck in!
