Avocado and spinach ‘pesto’
- 1 medium avocado
- 2 cloves of garlic
- 100g spinach leaves
- Juice of a lemon
- Olive oil, at least 2 tablespoons, but may need more to make the consistency as required
- 2 tablespoons nutritional yeast
- Salt and pepper to taste
- Add all of the ingredients to a food processor and blitz until the mixture is a smooth pesto consistency.
- We like to mix up this recipe by adding in frozen peas, or pine nuts, or pistachios. Anything goes really – let your imagination run wild!
