Avocado and spinach pesto

Avocado and spinach ‘pesto’


  • 1 medium avocado
  • 2 cloves of garlic
  • 100g spinach leaves
  • Juice of a lemon
  • Olive oil, at least 2 tablespoons, but may need more to make the consistency as required
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste


  1. Add all of the ingredients to a food processor and blitz until the mixture is a smooth pesto consistency.
  2. We like to mix up this recipe by adding in frozen peas, or pine nuts, or pistachios.  Anything goes really – let your imagination run wild!
