Mango salsa


  • 1 large ripe mango, or 2 smaller ones
  • 1 red onion
  • 1 red chilli
  • 15g fresh mint
  • 2 limes


  1. Chop the mango flesh into bite sized chunks and add to a bowl
  2. Finely dice the red onion and chilli and add to the mango
  3. Shred the mint leaves and sprinkle on top of the mixture
  4. Juice the limes and pour over the mixture, before mixing everything together
  5. Serve alongside your favourite barbequed food in the summer time – works really well with veggie kebabs, steaks and chunky barbequed fish fillets!
